[BUG] test_ncf_functional timeout

Description

The gpu-nightly test test_ncf_functional() always fails due to timeout (See the logs). And I find it is set to time out after 7200 seconds: https://github.com/recommenders-team/recommenders/blob/69743e9fd06e35ffec07b8495124e6522498e8dc/tests/functional/examples/test_notebooks_gpu.py#L39-L51
