Doc update - Unable to pull latest tag according to documentation

Per https://quay.github.io/clair/howto/getting_started.html (https://github.com/quay/clair/blob/main/Documentation/howto/getting_started.md) the latest tag should be available. Using podman to pull latest tag results in `manifest unknown` . Pulling nightly tag pulls successfuly.
