Consider issue templates

Apparently there's an issue here about some GraphQL endpoint, which sounds interesting to me but I'm having to scroll past stuff like #1061 and #1059 which isn't really telling me a lot about the health of the codebase, but does give some indication into the health of the project.

I think if you add some issue templates, you might get better quality reports; filter out the noise, get better signal.
