Documentation: be more specific on QoS measures

The documentation lacks some important information for system and network admins regarding how QoS is used:

• what IP fields are used? ToS? DSCP?
• what values are used?
• is it possible to set these fields and values in the config?

It is often said in blogs and forums that "QoS in mumble can break connections because some routers don't handle it well". Assuming it's difficult to know what to expect, it's also difficult to say "my router has the required filters / traffic classes, and will handle it".

Also, for network admins, facilitating the transit of this traffic by knowing how to differentiate it on the network would be nice.
