Bump gateway-api version and image version in Traefik chart for 1.34, 1.35 and 1.36

Bump gateway-api version to 1.6.1. This is for the K3s versions that are not bundling Gateway-api. So 1.34, 1.35 and 1.36.
Bump also Traefik image to 3.7.12
