Update the MyST parser implementation

The MyST parser in Jupytext might be outdated compared to the latest MyST Markdown implementation, as I hear from private discussions with @agoose77.

We should revisit the implementation and possibly consider delegating the ipynb to myst conversion to MyST directly, as we do for some other formats like Quarto, Pandoc or Marimo.
