Update and Feature Release Fork

Issue

I have loved using this project and have wanted to be able to use it on an ESP32-S3 for the increased processing power. In an attempt to keep backwards compatibility, I have been working on a major update and using it at my house for several weeks now.

I focused on updating all the base libraries to the most recent versions, adding functionality I wanted as well as several other requests. I added a lot of processing optimizations and can now run 30 second updates on 2 digital sequences reliably on the ESP32-CAM. There is also more error checking and self checking and recovery.

I am still working on the ESP32-S3 testing and have not tested the analog processing, but the core functionality has not been changed so I don't expect much of an issue.

I highly recommend a backup of the current device before upgrading or a fresh installation. There is an update process that should hopefully capture most of the situations. You will still most likely need to take a new reference image, setup alignment, and confirm the ROIs.

There is a new per ROI check that will allow you to do interactive testing of your setup to confirm the ROI region is good.
