Restructure and cleanup labels

For our labels we currently have a bit of a mess tbh. There is no order to it and a lot of them remain unused as it's too complex (IMO)

I would suggest we adopt a more structured approach and remove a bunch of the labels we currently have that are not and will likely never be used.

My idea is:

• kind:{bug,documentation,enhancement,security,localization,accessibility}
• page:{terminal,etc...}
• arch:{arm,x86}
• platform:{rhel,suse,fedora,etc...}

But also keep some as normal

• no-test
• good-first-issue
• blocked
• jira

With the structure it will make it easier to find what you're looking for. Want to add a kind label? Just search for kind and you can find the types we have etc.
