Is Your Feature Request Related To A Problem? Please describe.

Is it possible that the chocolatey/choco image could be built for multiple windows kernels (ltsc2022, ltsc2025, etc)?

I use docker in CI for building and testing of all my projects that run on Windows. This includes using the official docker image to create and test all my chocolatey packages.

However, this is the only Windows Docker image I use in my projects that only provides support for a single kernel. This means that every time I want to use this image, I am unable to use process isolation (since the image is built for an older kernel than the currently supposed versions of Windows Server). Using hyperv isolation instead of process isolation uses a whole lot more system resources to use this incredibly useful Docker image.

An example of this multiple kernel Docker image for Windows can be found in the official Windows Docker image for Python is released,

Describe The Solution. Why is it needed?

Having the Docker image chocolatey/choco for multiple kernels (or at least the most recent one) would mean that it could be run in process isolation on more operating system and thus much easier to use.
