[Docs] Chapter 1-learning-from-experience README is out of sync with Experiment 8-1 / 8-2 files

Description

The documentation under chapter1/learning-from-experience/ appears to be out of sync with the current experiment numbering and actual files in the repository. The experiment seems to have been renumbered from 7-1 / 7-2 to 8-1 / 8-2, but several README references and commands still use the old numbering.
