Support org formatted README by default

Summary

Org is a text-based alternative to markdown, and is supported by Github for README rendering. It should be supported by uv by default. Getting an error just because my README.org isn't immediately recognized by file extension -- despite the format being supported by the largest git repository host on the internet -- seems a bit off.
